Our current gas log set (from "big box" store) hisses when turned up to a higher flame. We suspect that it is the quality of the gas log. Will we not have that hissing if we purchase a higher quality gas log?

Hissing can indeed be a byproduct of inexpensive gas burners. The R.H. Peterson brand we carry is among the best in the industry and are very quiet during operation. The only issue that can cause hissing is an improperly routed gas line. As long as the line is not kinked or folded, there will not be an issue.
