I have metal side vents in the fire box that lead to the outside vents in chimney. I don't want to use these when I light a fire. Currently they have insulation (yellow) stuffed in them. Is that fireproof? If not can I stuff them with ceramic wool?

It is likely the insulation that is there currently is fiberglass, which is fire resistant, but can theoretically burn if heated to a high enough temperature. Use of ceramic wool insulation is definitely a better alternative and is designed to resist deterioration that can occur from exposure to heat over time.
